I had so much fun with the sixth edition of my #followfriday series featuring a few up-and-coming bloggers (and Instagrammers). This month I made Staci’s peanut butter and chocolate cakesicles, Stacie’s chocolate zucchini bread and Jess’s golden oreo funfetti cupcakes. The reason I said Instagrammers is because Staci isn’t actually a blogger. But her cakesicles looked so yummy that I asked her for the recipe! I’m sure she’d be happy to share it with you, too. 🙂

I asked Staci for her peanut butter and chocolate cakesicle recipe back in May but didn’t have time to make them until June. They are so easy to make and absolutely delicious. I made them when we had company for dinner, and we gobbled them all up pretty quickly. I guess technically these aren’t cakesicles since the peanut butter base isn’t crumbled cake, but I’m not sure what else to call them. Peanut butter pops maybe? I can’t tell you the last time I made a loaf of bread. Until I tried Stacie’s chocolate zucchini loaf from Sugarface Bakes. I had a little trouble with this recipe. I think I slightly underbaked it, which caused the middle of the loaf to collapse after it came out of the oven. But guys, it doesn’t matter, because this bread is delicious! Plus it has zucchini in it, and I always feel a little healthier when I sneak veggies into baked goods. It’s actually pretty easy to make. I just never bake bread, and while I thought it was done I wasn’t 100% sure. Next time I know!
I had the most fun with this last recipe. Now, Jess from My Baking Bliss doesn’t decorate her golden oreo funfetti cupcakes like gnomes. I did that as part of a mythical creatures Instagram theme week with @life_and_sprinkles. But don’t worry about what yours look like. All that matters is how yummy they are! My husband raved about them, and he was a little sad that we gave most of them to my sister’s family. (I was a little sad about that, too. One of these days I’ll tell you about the gnome gift exchange we always do with my sister and her husband.) They have a cookie at the bottom and crushed up cookies in the batter, which gives the cupcakes a wonderful texture and flavor. Plus you can never go wrong with sprinkles!
